Bean and Cheese Burritos

Ingredients:

  • 4 large tortillas (flour or whole wheat)
  • 1 can (approximately 15 ounces) refried beans
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • Optional toppings: salsa, sour cream, chopped tomatoes, sliced jalapeƱos, or guacamole

Directions:

  • Warm up the refried beans in a small saucepan over medium-low heat. Stir occasionally until heated through. You can also heat the beans in the microwave according to the instructions on the can.
  • Lay out the tortillas on a clean work surface.
  • Spoon a quarter of the warmed refried beans onto the center of each tortilla. Use the back of the spoon or a spatula to spread the beans evenly, leaving a small border around the edges.
  • Sprinkle about 1/4 cup of shredded cheese over the beans on each tortilla.
  • If desired, add any additional toppings you like, such as salsa, chopped tomatoes, sliced jalapeƱos, or guacamole.
  • Starting from one side, tightly roll up each tortilla, folding in the sides as you go, to create a burrito shape.
  • Heat a skillet or griddle over medium heat. Place the burritos seam-side down onto the skillet.
  • Cook the burritos for about 2-3 minutes on each side, or until the tortilla is slightly crispy and the cheese is melted. You can press the burritos gently with a spatula to help seal the edges.
  • Remove the burritos from the skillet and let them cool for a minute before serving.
  • Serve the bean and cheese burritos as is, or you can cut them in half diagonally for easier handling.
