Ingredients:
- 1 cup rolled oats
- 1/2 cup nut butter (such as almond butter or peanut butter)
- 1/4 cup honey or maple syrup
- 2 tablespoons green tea matcha powder
- 1/4 cup unsweetened shredded coconut
- 1/4 cup chopped nuts (such as almonds, cashews, or pistachios)
- 1/4 cup dried fruit (such as chopped dates, raisins, or cranberries)
- Optional: 1-2 tablespoons water, if needed for binding
Directions:
- In a mixing bowl, combine the rolled oats, nut butter, honey or maple syrup, and green tea matcha powder. Stir until well combined.
- Add the shredded coconut, chopped nuts, and dried fruit to the mixture. Mix everything together until evenly distributed.
- If the mixture seems too dry and crumbly, add 1 to 2 tablespoons of water gradually, as needed, until the mixture holds together when pressed.
- Once the mixture is well combined and holds together, use your hands or a cookie scoop to portion out small amounts of the mixture.
- Roll the portions into balls between your palms, applying gentle pressure to shape them.
- Place the energy balls on a baking sheet or plate lined with parchment paper.
- Chill the energy balls in the refrigerator for at least 30 minutes to firm up.
- Once chilled, the Green Tea Matcha Energy Balls are ready to enjoy! They can be stored in an airtight container in the refrigerator for up to a week.
These energy balls provide a boost of natural energy from the green tea matcha powder and are packed with nutritious ingredients. They make a great snack for on-the-go or a quick pick-me-up during the day. Enjoy!
